In my opinion the perfect cocktail is one that has a well balanced mix of flavors. This cocktail is it. The first time I tasted mezcal I was blown away by the smooth smokiness of it. It tastes really good in citrus and fruit cocktails.

Amaro is another liquor you may not have tried before. It’s an Italian liqueur that is traditionally sipped after a meal to aid in digestion. It has a mixture of herbs, spices and roots that give it a slight bitterness and earthy flavor. Don’t be put off by that though, it’s actually really good.
How to Make a Mezcal Sour
This recipe uses a 2-step shaking process. You start by adding all of the ingredients to the shaker without any ice and shake it until it’s frothy. This allows time for the foam to form.
Then you add in the ice and shake it a second time to chill the cocktail for serving.
When you pour it, the foamy head will form at the top, just the way you want it to. Then you can add a pretty little swirl of bitters on the top for presentation. Perfection!

Mezcal Sour

Ingredients
- 1.5 oz fresh lime juice
- 1.5 oz Mezcal
- 1 oz Amaro Montenegro or Nonino
- 1 tsp light agave syrup
- 1 large egg white
- Angostura bitters, for garnish
- Ice
Instructions
- Mix the lime juice, mezcal, amaro, agave, and egg white in a cocktail shaker and shake for one minute, until frothy.
- Fill the shaker with ice and shake for an additional 30 seconds.
- Strain through a fine-mesh sieve into a lowball glass. Garnish with a few drops of Angostura bitters.
