Mexican Street Corn Cup Appetizers
Ingredients
- 2 cans corn or 4 ears of corn on the cob
- 1/2 cup mayonnaise
- 1 lime juiced and zested
- 4 green onions chopped
- 2 jalapenos diced
- 1/2 teaspoon chili powder mild to hot
- 1/4 teaspoon salt
- 1/2 cup Cotija cheese
- 1/2 cup cilantro chopped
- 1 lime cut into wedges
- Tajin
Instructions
- Combine the corn, mayonnaise, lime juice, lime zest, green onions, jalapeno, chili powder, and salt in a bowl.
- Refrigerate until chilled.
- Garnish with Cotija cheese, cilantro, lime wedges, and Tajin. Serve cold.
