Fun & Festive Mexican Charcuterie Board
Ingredients
- 12 tortillas flour and/or corn
- 1 pound chicken breasts cubed
- 2 tablespoons taco seasoning
- 1 can black beans
- 1 can corn
- 1 can refried beans
- 1 cup pico de gallo
- 1 cup guacamole
- 1 cup salsa
- 1 cup shredded cheese
- 1/2 red onion chopped
- 1/2 cup sour cream
- 1 cup lettuce shredded
- 2 avocados sliced
- 2 jalapenos sliced
- 1/2 cup sliced olives
- 1/2 cup cilantro chopped
Instructions
- Add chicken to frying pan over medium heat and cook until browned. Add the taco seasoning and stir to coat the chicken. Transfer to a serving bowl.
- Heat the black beans, corn and refried beans and add to separate serving bowls. Warm the tortillas before adding to the board. All other ingredients can be served cold.
