Ingredients
 
 

  • 2 cans corn or 4 ears of corn on the cob
  • 1/2 cup mayonnaise
  • 1 lime juiced and zested
  • 4 green onions chopped
  • 2 jalapenos diced
  • 1/2 teaspoon chili powder mild to hot
  • 1/4 teaspoon salt
  • 1/2 cup Cotija cheese
  • 1/2 cup cilantro chopped
  • 1 lime cut into wedges
  • Tajin

Instructions
 

  • Combine the corn, mayonnaise, lime juice, lime zest, green onions, jalapeno, chili powder, and salt in a bowl.
  • Refrigerate until chilled.
  • Garnish with Cotija cheese, cilantro, lime wedges, and Tajin. Serve cold.

Notes

To make this appetizer even better, refrigerate for at least 30 minutes before serving.
