Brie melts in the oven and transforms into this wonderfully creamy, yummy cheese bliss that goes great with crackers and crostini. It’s an excellent appetizer for a dinner party or as part of a cheese board. We make it often, along with other cheesy dips like this Baked Fontina dip and this baked green chili cream cheese dip.
When shopping, search for the 8-ounce Brie wheel in the wooden box, as the box can be used as a baking dish. If that is not possible, place the wheel in a smaller baking dish. Use a dish that help hold its form while cooking.
Don’t have Brie? Camembert can also be used in this recipe. Brie is creamier than Camembert since it is made with cream during the production process but it’s very similar and just as tasty.
Ingredients You’ll Need
- Brie Wheel – Brie is a soft cheese made from cow’s milk. Apart from its soft texture, it has a fruity and nutty flavor. I like to get the triple cream brie for an even more indulgent spread.
- Garlic – The fresher the better.
- Olive Oil – Use a high-quality, tasty olive oil rather than a lower-quality cooking oil. It adds a ton of flavor and healthy fats.
- Rosemary – Use a fresh rosemary, when possible. You can also use thyme or sage if you like those flavors.
- Crostini or crackers – The best way to serve this dip is with crostini or crackers, or spread onto bread.
How to Make Baked Brie with Garlic
Preheat the oven to 375 degrees F.
Remove the wheel of brie from its packaging and place it in a baking dish. If it came in a wooden holder, you can leave it in the holder so that it keeps it shape while baking. Otherwise, you’ll want to choose a round baking dish that is only slightly larger than the brie, so it keeps the cheese contained as it bakes.
Score the top of the cheese with a knife. Be careful not to cut all the way through to the bottom. You just want to make room for the garlic and give the cheese room to expand while it cooks.

Wedge the garlic slices into the slits of the brie. Drizzle with olive oil and sprinkle on the rosemary. Be generous with the herbs. The flavors will meld and sink into the cheese. You can sprinkle on some flake salt as well for additional flavor.

Bake the cheese for 15 minutes. The inside of the cheese should be melted and gooey. The top will get golden and bubbly. If it’s not to that level after 15 minutes, return it to the oven for 2-3 more minutes.
You want to serve this hot straight from the oven. Set out some crostini and crackers, and a cheese knife to scrape up all that cheesy goodness. It will stay hot for about 20 minutes, but that’s usually enough for it to be scarfed down by your guests.

Additonal Helpful Tips
- Pressing the brie with the tip of your finger is a good technique to see if it’s baked to perfection. It should be soft and give a bit. If it still appears to be firm, bake for a few more minutes.
- Give the brie a chance to cool for a few minutes before serving. It will allow everyone to eat it without burning their mouths.
- There are many flavor variations for baked brie. You can add ingredients like chili and honey, or any type of fruit spread, instead of herbs. Use what you like.

Frequenty Asked Questions
Can I substitute brie with any other cheese?
Yes. If you don’t have brie cheese, you can use Camembert. It has a similar fruity and earthy flavor like brie. Cheeses like cheddar don’t work well because you want a nice creamy cheese that melts smoothly without being greasy.
What crackers go with brie cheese?
Water crackers are ideal for serving with this brie cheese. They work well since they don’t break when dipped or spread with cheese. Ritz or butter crackers tend to break too easily. Baked crackers are the best way to go.
What to do with leftover baked brie?
If there are any leftovers, warm them in the microwave for a few seconds until the brie softens and becomes creamy again. Leftovers can also be refrigerated in an airtight container for a few days. Brie is great in sandwiches, wraps and burgers.
