Mini Carnitas Quesadillas are the perfect bite-sized party snack—crispy, cheesy, and packed with bold, flavor. Whether you’re making them for game day, a family gathering, or just a fun appetizer, these mini quesadillas deliver big taste in a small package.

The rich, tender carnitas pairs perfectly with melty cheese, all sandwiched between crispy street taco size flour tortillas. Serve them with chopped onions and cilantro and your favorite dips like guacamole, salsa, or chipotle crema.
Helpful Tips
- Flour Tortillas: Use street taco size flour tortillas for this recipe.
- Don’t Overfill: A little carnitas goes a long way—overstuffing can lead to messy, hard-to-flip quesadillas. Stick to about 1-2 tablespoons of filling per mini quesadilla.
- Crisp to Perfection: Cook the quesadillas over medium heat with a little oil or butter for a perfectly golden, crunchy exterior without burning.
