My Heart Will Go On Cocktail

This cocktail is something a little different and unique to serve for Valentine’s Day. It’s not overly sweet, and is actually a little bitter, but you’re going to love it.

We based this cocktail on the Hemingway special daiquiri called a Popa Doble. It’s called that, in part, because it’s a double-sized cocktail, but it also perfectly serves 2 in coupe glasses. It’s made with rum, Maraschino liqueur, and grapefruit juice. If you want to make it less bitter, add simple syrup. Our version of the drink adds amaro to the mix.

Helpful Tips

  • The cocktail ends up being a little bitter, due to the grapefruit juice. If you don’t like grapefruit juice, feel free to replace it with cranberry juice (or another that you like).
  • Adding simple syrup takes away some of the bitterness and makes a sweeter cocktail. Add as much or as little as you like, depending on your preference.
  • Dress the cocktail up with a cherry garnish, or use some strawberries, to make it a little more romantic.

Ingredients
  

  • 4 ounces white rum
  • 1 ounce amaro
  • 1 ounce grapefruit juice
  • 1 ounce lime juice
  • 1/2 ounce maraschino liqueur
  • 1/2 ounce simple syrup
  • 4 maraschino cherries
  • 1 lime wheel for garnish

Instructions
 

  • Add ice to a cocktail shaker. Pour in all the ingredients and shake vigorously for 15 seconds.
  • Strain into coupe glasses.
  • Garnish with 2 cherries and a lime wheel.

Notes

  • You can adjust the bitterness by adding more or less simple syrup.
