If you’ve ever craved a snack or dinner that’s crispy, cheesy, and absolutely loaded with flavor, homemade chicken taquitos are here to save the day. These rolled tortillas stuffed with shredded chicken, creamy cheese, and zesty spices are quick to prepare, easy to cook, and wildly satisfying.

These taquitos deliver on crunch and comfort. Plus, they’re baked or air-fried, which means you can enjoy all the crispiness without the heaviness of deep-frying.

Why You’ll Love Them

No soggy tortillas here! These taquitos are golden and crunchy on the outside, thanks to a light brushing of oil or a quick spritz of cooking spray. The chicken base is versatile. You can stick to classic shredded chicken or mix it up with cream cheese, diced jalapeños, or even black beans for extra heartiness.

Taquitos are fun to eat and easy to dip. Serve them with guacamole, salsa, or sour cream for a dipping station everyone can enjoy.

Helpful Tips

  • Use warm tortillas – Cold tortillas tend to crack when rolled. To avoid this, warm them up in a skillet or microwave for 20-30 seconds before filling. This makes them pliable and easier to roll tightly. Corn tortillas are traditional, but flour tortillas work if you prefer a softer bite.
  • Secure the roll – To keep your taquitos from unraveling in the oven or air fryer, place them seam-side down on the baking sheet or fryer basket. If you’re frying them in oil, use a toothpick to hold them in place temporarily. Just remember to remove it before serving!
  • Don’t overfill – Less is more when it comes to filling your taquitos. Overstuffing makes it difficult to roll them tightly and can lead to filling spilling out during cooking. A heaping tablespoon of chicken mixture per tortilla is usually the perfect amount.

Servings 12 taquitos

Ingredients

  • 3/4 pound 340 g cooked shredded chicken
  • 1/2 teaspoon 1 g chili powder
  • 1/2 teaspoon 1 g ground cumin
  • 1/2 teaspoon 2 g garlic powder
  • 1/2 teaspoon 1 g onion powder
  • 1/4 teaspoon 0.5 g paprika
  • 1/4 teaspoon 2 g salt
  • 1/4 teaspoon 0.5 g black pepper
  • 12 corn tortillas
  • 1 cup 112 g shredded cheese such as cheddar or Monterey Jack
  • Cooking spray or oil for brushing

Instructions

  • In a bowl, combine the shredded chicken with chili powder, cumin, garlic powder, onion powder, paprika, salt, and black pepper. Mix well to ensure the chicken is evenly seasoned.
  • Warm the corn tortillas between a damp paper towel in the microwave for a few seconds to make them pliable.
  • Place a spoonful of the chicken and a sprinkle of cheese on each tortilla. Roll the tortillas tightly into cigar shapes. Secure them with toothpicks if it feels necessary to hold them together.
  • Lightly spray or brush the taquitos with cooking spray or oil to help them crisp up in the air fryer.
  • Arrange the taquitos in a single layer on a baking sheet in the air fryer basket, making sure they are not touching each other. You might need to cook them in batches.
  • Bake or air fry the taquitos at 375°F (190°C) for 8-10 minutes, or until they are golden brown and crispy. It can take a few minutes longer to bake than to air fry.
  • Serve the air fryer taquitos with your favorite dipping sauces such as salsa, guacamole, or sour cream.
