Instructions
In a bowl, combine the shredded chicken with chili powder, cumin, garlic powder, onion powder, paprika, salt, and black pepper. Mix well to ensure the chicken is evenly seasoned.
Warm the corn tortillas between a damp paper towel in the microwave for a few seconds to make them pliable.
Place a spoonful of the chicken and a sprinkle of cheese on each tortilla. Roll the tortillas tightly into cigar shapes. Secure them with toothpicks if it feels necessary to hold them together.
Lightly spray or brush the taquitos with cooking spray or oil to help them crisp up in the air fryer.
Arrange the taquitos in a single layer on a baking sheet in the air fryer basket, making sure they are not touching each other. You might need to cook them in batches.
Bake or air fry the taquitos at 375°F (190°C) for 8-10 minutes, or until they are golden brown and crispy. It can take a few minutes longer to bake than to air fry.
Serve the air fryer taquitos with your favorite dipping sauces such as salsa, guacamole, or sour cream.
