Beer Cheese Dip

Watching the game on TV and need a little snack? You can’t go wrong with some soft pretzels and this beer cheese dip. It’s perfect for dipping and everyone loves it.

We stick with a pretty basic cheddar cheese and pilsner blend, but you can change up this dip however you like with a different cheese or beer. The combinations are endless.

Like more hop-forward flavors? Go with an IPA. Like a more mild and flavorful dip? Go with a hefeweizen. For something wildly different, add some blue cheese or stilton to the mix.

Ingredients in Beer Cheese Dip

Only things you’ll need to make this are:

  • Beer
  • Cheese
  • Flour
  • Butter
  • Seasonings (salt, pepper, garlic salt, and Dijon mustard)

The small number of ingredients makes it pretty likely you’ll have everything you need when you want to mix up a bowl of beer cheese dip.

As we’ve already mentioned, you can substitute most beers and cheeses, in case you don’t have a basic pilsner and cheddar on hand. Hard cheeses are the best bet for this dip, and some of the best are: gouda, gruyere, fontina, swiss, and emmental.

Beer Cheese Dip

For beer, you can use a pale ale, IPA (adds extra bitterness and hops aroma), blonde or red ale, or even a Guinness. I prefer something light and low in IBUs, so a pilsner or a lager are what I stick with.

Pair this dip with our homemade soft pretzels and you’ve got the perfect appetizer for game day or to add to your party spread.

Ingredients
  

  • 2 tbsp butter
  • 2 tbsp flour
  • 1 tsp garlic powder
  • 1/2 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 cup lager or light beer
  • 8 oz cheddar cheese grated medium or sharp
  • 1/4 tsp cayenne pepper if desired

Instructions
 

  • Add butter and flour to a saucepan over medium heat. Whisk to combine as the butter melts. Add the garlic powder, mustard, salt and pepper. Cook for 1 minute.
  • Add beer, whisking continuously as you pour to form a smooth sauce. Cook for about 3 minutes, whisking occasionally, until slightly thickened. If it’s too thick, add a bit more beer.
  • Add the cheese a little bit at a time, stirring until melted.
  • Serve immediately with soft pretzels or other dippers.
