Tortilla Shrimp Bites are the ultimate party appetizer. They are light and flavorful, with a crispy tortilla chip base, succulent shrimp, and a fresh creamy guacamole.

Ingredients

  • 1 avocado
  • 1/4 teaspoon salt, divided
  • 1/4 teaspoon garlic powder
  • 18 small shrimp, peeled and deveined
  • 2 teaspoons fresh lime juice
  • Pinch of Tajin, if desired
  • 18 round tortilla chips

Instructions

  1. Lightly mash the avocado with half the salt and the garlic powder in a bowl. Taste and adjust seasoning to your preference. Set aside.
  2. Heat a skillet over medium-low heat with a little cooking oil. Add the shrimp, remaining salt, and lime juice. Sprinkle on some Tajin if you want. Cook for 2 minutes per side. Transfer to a plate to cool.
  3. Place the tortilla chips on a serving platter. Top with mashed avocado and a shrimp. Can be served warm or cold.
