These buffalo chicken stuffed peppers are packed with creamy buffalo chicken filling and topped with melty cheese and a drizzle of blue cheese dressing.

Ingredients

  • 12 jalapeno peppers, cut in half lengthwise and seeded
  • 1 cup shredded chicken breast
  • 4 ounces cream cheese, softened
  • 1/2 cup shredded cheddar cheese, divided
  • 4 tablespoons Frank's Buffalo Wing Sauce, divided
  • 1/4 teaspoon salt
  • 1/4 cup blue cheese dressing, optional

Instructions

  1. Preheat the oven to 400° F (200° C).
  2. In a bowl, combine the shredded chicken, cream cheese, half the cheddar cheese, half the buffalo wing sauce, and the salt. Stir to combine.
  3. Stuffed the peppers evenly with the filling. Top with the remaining cheddar cheese. Bake for 15 minutes, until the cheese has melted and is bubbly on top.
  4. Drizzle on the remaining buffalo sauce and blue cheese dressing (or serve the blue cheese dressing as a dip on the side).
