Tortilla Shrimp Bites are the ultimate party appetizer. They are light and flavorful, with a crispy tortilla chip base, succulent shrimp, and a fresh creamy guacamole.

Ingredients
  

  • 1 avocado
  • 1/4 teaspoon salt divided
  • 1/4 teaspoon garlic powder
  • 18 small shrimp peeled and deveined
  • 2 teaspoons fresh lime juice
  • Pinch of Tajin if desired
  • 18 round tortilla chips

Instructions
 

  • Lightly mash the avocado with half the salt and the garlic powder in a bowl. Taste and adjust seasoning to your preference. Set aside.
  • Heat a skillet over medium-low heat with a little cooking oil. Add the shrimp, remaining salt, and lime juice. Sprinkle on some Tajin if you want. Cook for 2 minutes per side. Transfer to a plate to cool.
  • Place the tortilla chips on a serving platter. Top with mashed avocado and a shrimp. Can be served warm or cold.

Notes

  • They cook quickly, fit perfectly on the tortilla, and look impressive on the platter.
  • This keeps the bites perfectly sized and easy to handle. They make a nice presentation as well.
  • Shrimp cook very quickly and when they are overcooked they turn rubbery and unappealing. They should only cook for about 2 minutes per side.
