Shamrock Breakfast Platter
Ingredients
For the Green Pancakes:
- 2 cups pancake batter use your favorite
- A few drops of green food coloring or blended spinach for a natural option
- 2 tablespoons butter cut into shamrock shapes
For the Shamrock Avocado Toasts:
- 2 ripe avocados sliced
- Salt to taste
- 4 slices sourdough bread cut into shamrocks
For the Fruit
- 1 bunch Green grapes
- 2 Kiwis sliced
- 1 Green apple sliced
Instructions
- Prepare your favorite pancake batter (I use Krustez). Add some green food coloring. Heat a non-stick skillet over medium heat and pour in the batter to form pancakes. Cook until bubbles form on the surface, then flip and cook until golden. Set aside.
- Use a shamrock cookie cutter to cut the bread into shamrocks. Toast the bread. Smash the avocado and spread it onto the toasts. Sprinkle with salt.
- On a large serving board or platter, arrange the green pancakes, shamrock avocado toasts, green grapes, sliced kiwi, and green apple slices. Add the shamrock butter and syrup for the pancakes.
