Garlic Parmesan Chicken Skewers

These tender and juicy chicken pieces are marinated in a flavorful garlic and Parmesan mixture, then grilled to perfection for a delightful smoky finish. The exterior is packed with flavor and texture, so these aren’t your typical bland and boring chicken skewers.

We like to make these for a barbeque or outdoor summer party. Our guests are always excited by the flavor these skewers bring, but even better they’re easy to eat off the skewer so you don’t even need a fork.

Helpful Tips

  • Use Fresh Ingredients: For the best flavor, use fresh garlic and high-quality Parmesan cheese. Fresh ingredients will elevate the overall taste of the skewers.
  • Marinate Longer for More Flavor: If time allows, marinate the chicken for longer than 30 minutes. This will deepen the flavors and make the chicken even more tender and tasty.
  • Experiment with Seasonings: Feel free to customize the marinade by adding your favorite herbs and spices. A dash of red pepper flakes can add a nice kick, or you can incorporate lemon juice for a bright, zesty flavor.

  • 3 tablespoons olive oil
  • 3 cloves garlic minced
  • 3/4 cup Parmesan cheese freshly grated
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon paprika
  • Salt and ground black pepper to taste
  • 1 tablespoon fresh parsley chopped (for garnish)
  • Wooden or metal skewers

Instructions

  • In a large bowl, mix together the olive oil, minced garlic, ½ the grated Parmesan cheese, dried oregano, dried basil, paprika, salt, and black pepper until well combined. Reserve about ¼ cup of the mixture
  • Add the cubed chicken to the bowl with the remaining mixture and toss until all the pieces are evenly coated in the mixture. Marinate in the refrigerator for 30 minutes.
  • Thread the chicken onto the skewers evenly. Don’t crowd them.
  • Preheat a grill to medium-high heat. Place the chicken skewers on the grill and cook for 4-5 minutes on each side, basting with the remaining sauce as it cooks. The chicken should reach an internal temperature of 165°F/74°C.
  • Once cooked, remove the skewers. Garnish with a sprinkle of Parmesan cheese and the fresh parsley.
