1 1/2lbsboneless skinless chicken breastscut into bite-size pieces
3tablespoonsolive oil
3clovesgarlicminced
3/4cupParmesan cheesefreshly grated
1teaspoondried oregano
1teaspoondried basil
1/2teaspoonpaprika
Salt and ground black pepper to taste
1tablespoonfresh parsleychopped (for garnish)

Instructions
In a large bowl, mix together the olive oil, minced garlic, ½ the grated Parmesan cheese, dried oregano, dried basil, paprika, salt, and black pepper until well combined. Reserve about ¼ cup of the mixture
Add the cubed chicken to the bowl with the remaining mixture and toss until all the pieces are evenly coated in the mixture. Marinate in the refrigerator for 30 minutes.
Thread the chicken onto the skewers evenly. Don’t crowd them.
Preheat a grill to medium-high heat. Place the chicken skewers on the grill and cook for 4-5 minutes on each side, basting with the remaining sauce as it cooks. The chicken should reach an internal temperature of 165°F/74°C.
Once cooked, remove the skewers. Garnish with a sprinkle of Parmesan cheese and the fresh parsley.
