Garlic Parmesan Chicken Skewers
Ingredients
- 1 1/2 lbs boneless skinless chicken breasts cut into bite-size pieces
- 3 tablespoons olive oil
- 3 cloves garlic minced
- 3/4 cup Parmesan cheese freshly grated
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon paprika
- Salt and ground black pepper to taste
- 1 tablespoon fresh parsley chopped (for garnish)
- Wooden or metal skewers
Instructions
- In a large bowl, mix together the olive oil, minced garlic, ½ the grated Parmesan cheese, dried oregano, dried basil, paprika, salt, and black pepper until well combined. Reserve about ¼ cup of the mixture
- Add the cubed chicken to the bowl with the remaining mixture and toss until all the pieces are evenly coated in the mixture. Marinate in the refrigerator for 30 minutes.
- Thread the chicken onto the skewers evenly. Don’t crowd them.
- Preheat a grill to medium-high heat. Place the chicken skewers on the grill and cook for 4-5 minutes on each side, basting with the remaining sauce as it cooks. The chicken should reach an internal temperature of 165°F/74°C.
- Once cooked, remove the skewers. Garnish with a sprinkle of Parmesan cheese and the fresh parsley.
