These Reuben Sliders are made with tender corned beef, tangy sauerkraut, melted Swiss cheese, and creamy Thousand Island dressing making a crowd-pleasing twist on a classic sandwich.
We are totally in love with Reuben sandwiches in my house. When we have a party, one of the first appetizers we think of is a Reuben slider. Everyone loves them and you don’t see them very often, so people go mad for them.

To make them, you can use corned beef that you have leftover or buy sliced pastrami like we use in these simple Reuben bites. Another easy way to go is air fryer brisket. Whatever works for you.

- Slider Buns – There are multiple brands and types of slider buns available. We even sometimes use Hawaiian buns or pretzel buns. You can try making your own with this recipe.
- Corned Beef – You can make the corned beef yourself. It’s a brined brisket, essentially. Or you can buy a premade corned beef or substitute with pastrami for a slightly different flavor.
- Sauerkraut – Make your own or use a store brand, like Hengstenberg, Nathan’s or Bubbies.
- Swiss Cheese – I just buy sliced swiss cheese at the deli counter. You can buy it in blocks or in packaged slices too
- Thousand Island Dressing – Make your own (recipe below) or buy it.
- Unsalted Butter – Salted butter will work fine too.

- To make ahead, assemble the sliders in advance and refrigerate them until you’re ready to bake. Just remember to brush the butter on top right before baking for that golden finish.

How to Make Reuben Sliders
Step 1: Preheat the oven
Start by preheating your oven up to 350°F (175°C). Spray the bottom and sides of a 9×13 baking dish.
Step 2: Prepare the buns
Grab those slider buns and slice them right down the middle. Take the bottom halves and nestle them into the prepared 9×13 inch baking dish.
Lay out the corned beef, sliced as thin as you can manage, on those bun bottoms. Next, pile on the sauerkraut, making sure it’s spread out nice and even.

Top each one with a slice of Swiss cheese, because what’s a slider without cheese? For the top halves of the buns, slather them with a generous layer of Thousand Island dressing on the cut side before capping off each slider.

Give the tops a light brush with butter to make them extra tasty.

Step 3: Bake

Cover the dish with aluminum foil and pop it in the oven for 15 minutes. You’re looking for that cheese to get all melty and the sliders to warm up through and through.
After that, take off the foil and let them bake for another 5 minutes, just until the tops turn a delightful golden brown and get a bit of crunch to them.
How to Make Thousand Island Dressing

If you want to make your own Thousand Island dressing, it’s very easy and you likely already have the ingredients on hand. Here is our recipe:
- 1/3 cup mayo
- 1 tablespoon ketchup
- 1 tablespoon dill pickle relish
- 1/2 teaspoon garlic salt
- 1/2 teaspoon ground black pepper
Mix all the ingredients together in a bowl.

Reuben Sliders
Ingredients
- 12 slider buns
- 1 pound thinly sliced corned beef
- 1 cup sauerkraut drained
- 12 slices Swiss cheese
- 1/2 cup Thousand Island dressing
- 2 tablespoons unsalted butter melted
Instructions
- Preheat the oven to 350°F (175°C).
- Slice the slider buns in half and place the bottom halves in a greased 9×13 inch baking dish.
- Layer the thinly sliced corned beef on the bottom halves of the slider buns.
- Spoon the sauerkraut evenly over the corned beef.
- Place a slice of Swiss cheese on top of the sauerkraut.
- Spread a layer of Thousand Island dressing on the cut side of the top halves of the slider buns and place them on top of the Swiss cheese to form sandwiches.
- Brush the butter over the tops of the slider buns.
