These Baked Salmon Skewers have a little citrus from the roasted lemon slices, seasoned salmon and a quick dill sauce that adds a creamy, tangy finish.
Ingredients
- 1 pound salmon fillet skinless , cubed
- 2 teaspoons olive oil
- 1 teaspoon lemon pepper seasoning
- 1/4 teaspoon salt
- 1 large lemon sliced thinly
For the dill sauce:
- 1 tablespoon fresh dill chopped
- 1 tablespoon red onion finely chopped
- 1/2 tablespoon fresh lemon juice
- 1/2 tablespoon extra virgin olive oil
- 1/2 tablespoon mayonnaise
- Salt and ground black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place salmon cubes into a bowl with olive oil, lemon pepper seasoning, and salt. Gently toss to coat.
