If you’re like me you probably have a bottle or two of Prosecco in the house and want to find a fun way to use it. Well, this is the recipe that will deplete that stock.
How to Make This Refreshing Peach Bellini Cocktail
This recipe calls for 2 fresh peaches, but if you don’t have fresh peaches on hand you can substitute canned or frozen peaches. Canned peaches are a great option, but but you won’t be using the liquid. It takes much longer to cook the liquid off and it’s a bit too sweet.
Frozen peaches work too and they save time since they come in small chunks and won’t have to be cut. You may have to adjust the sugar depending on the sweetness of the peaches you use.

Peach Bellini Cocktail
Ingredients
- 2 peaches peeled and cut into chunks
- 1 tbsp sugar or agave syrup
- 6 oz Prosecco
Instructions
- For the peach puree
- Wash and peel the peaches, then cut them into chunks. Put the peach chunks into a food processor or blender. Add the sugar.. Purée until smooth.
- Add the puree to a small saucepan over medium-high heat and heat, stirring occasionally, until it reduces by half. Remove from heat and cool completely. Then chill in the fridge until ready to use.
- To make 2 bellinis
- Add half the peach purée into each champagne flute. Pour the cold Prosecco over the top, to fill the glass.
- Stir gently before drinking.
