4 Leaf Clover Pinwheels
Ingredients
- 1 sheet puff pastry
- 3 ounces pesto
- 1 cup Parmesan cheese grated
- kitchen string
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Unroll the pastry on a flat, clean work surface. Spread the pesto evenly onto the pastry, leaving about 1” of space along one long side. Sprinkle with Parmesan cheese.
- Starting from the long side that has sauce all the way to the edge, roll the pastry tightly. When you come to the end without sauce, gently press to seal the roll.
- Slice the roll into 1” slices.
- Cut 12 – 8 inch long pieces of kitchen string. Roll them in olive oil. Then lay it across the pinwheel. Turn it over and cross the string, keeping it tight. Turn the pinwheel back over and tie the string in a knot.
- Place on the prepared baking sheet and bake for 20 -25 minutes, until the pastry is golden brown. Remove from oven and cool for 5 minutes.
- Using kitchen scissors, remove the strings carefully.
- Garnish fresh parsley or fresh basil and more shredded Parmesan cheese.
