  • Shredded chicken – Feel free to use leftover chicken (or even turkey) for these sliders.
  • Slider buns – I use brioche slider buns which give a little extra sweetness and are both soft and a bit chewy. If you want to try your hand at making homemade slider buns use this recipe.
  • Blue Cheese – You can use another type of cheese like Monterey Jack, mozzarella or Colby Jack if you don’t enjoy blue cheese.
  • Frank’s RedHot sauce – This is my favorite sauce. You can use any other buffalo sauce you like.
  • Butter – Mixing in melted butter will help the sauce stick to the chicken and keep it moist.

Expert Tips

  • Shredded chicken is the perfect texture for sliders, and it also absorbs the buffalo sauce better than whole chicken breasts. You can use leftover rotisserie chicken or cook chicken breasts in a slow cooker or instant pot until they’re tender enough to shred.
  • To get the perfect balance of spicy and buttery flavors, mix your Frank’s RedHot sauce with melted butter before tossing the shredded chicken in it. This will help the sauce stick to the chicken and prevent it from drying out.
  • These sliders can be served either cold or hot, depending on how you like them.

How to Make Buffalo Chicken Sliders

Step 1: Preheat the oven

Preheat oven to 350°F. Slice the buns in half down the middle, if they aren’t already. Place the bottom half on the baking sheet.

If you don’t want to make these in the oven, you can also put them in the air fryer, or microwave. Alternate cooking suggestions are in the recipe card.

Step 2: Mix the chicken

In a bowl, combine the chicken, cheese, hot sauce, and butter. Stir until well combined. This is a great chance to use up any leftover chicken you have. A rotisserie chicken is also a great way to go.

Divide the chicken mixture among the buns. Add on the top buns.

Step 3: Bake

Put the baking sheet in the oven and bake the sliders for about 10 minutes. If you don’t want the bun to be crunchy, start with 5 minutes and check their progress. They don’t have to be hot inside, just warmed through.

How to Store & Reheat

Refrigeration: If you have leftover sliders, store them in an airtight container or wrap them tightly in plastic wrap. Place them in the refrigerator. They can be stored for up to 2-3 days.

Since the sauce was mixed into the chicken, they won’t become soggy.

Reheating

Microwave: To reheat your sliders, you can use a microwave. Place them on a plate and microwave for 15-20 seconds. Heat in short intervals to avoid overcooking and losing the bun’s texture.

Oven or Toaster Oven: For a crisper texture, you can also reheat the sliders in an oven or toaster oven. Preheat to 350°F and bake for 5-7 minutes, or until they’re heated through.

Ingredients
  

  • 8 slider buns
  • 3 cups cooked chicken shredded
  • 1/2 cup blue cheese crumbled
  • 1/4 cup Frank’s RedHot Sauce
  • 2 tablespoons butter melted

Instructions
 

  • Preheat oven to 350°F. 
  • Slice the buns in half down the middle, if they aren’t already. Place the bottom half on the baking sheet.

  • Heat on high in the microwave for seconds.

Notes

  1. You can double the recipe, if desired. If using 12 Hawaiian rolls, increase chicken to 4 cups and Frank’s to ⅓ cup.
  2. If you don’t like blue cheese, replace with Monterrey Jack, mozzarella, or Colby Jack.
  3. These can be served cold, if you want. Just serve after assembling.
