If you love a melty grilled cheese, this Grilled Cheese Roasted Tomato Focaccia Bread takes it to the next level. Thick, fluffy focaccia then layered with gooey cheese , then toasted until golden and crisp on the outside. It’s hearty, full of flavor, and the kind of comfort food you’ll want on repeat all season long.

Grilled Cheese Focaccia

What makes this appetizer special is the combination of textures. The focaccia brings that chewy, airy bite, while the roasted tomatoes add a burst of sweetness that pairs perfectly with rich, melted cheese. It’s simple to make but feels a little more special than your everyday grilled cheese, making it perfect for a cozy lunch, an easy dinner, or even party food cut into smaller squares.

Helpful Tips

  • Choose melty cheese. Mozzarella, provolone, or fontina are great picks, but you can also mix in a sharper cheese like parmesan for more flavor.
  • Dress up the Focaccia. If you’re able to get the Roasted Tomato & Parmesan Focaccia from Trader Joe’s, that’s what I would recommend. If not, you can dress up your own with some roasted tomatoes and finely shredded Parm.
  • Use any type of cheese you like to fill the bread. I like to use a couple of different cheeses, and make sure they are good melting cheeses.
