Grilled Chicken & Pickle Skewers are the kind of appetizer that stops people mid-conversation. Juicy grilled chicken paired with tangy pickles might sound simple, but together they hit that perfect balance of smoky, savory, and bright. They’re easy to prep ahead and even easier to serve.

If you’re looking for something a little different for your next gathering, this is it. The pickles cut through the richness of the chicken, making each bite taste fresh and bold. Plus, anything on a skewer just feels party-ready without much effort.
Helpful Tips
- Use chicken thighs for extra flavor. Chicken breast works, but thighs stay juicier on the grill and are more forgiving if slightly overcooked.
- Pat the pickles dry. Too much moisture can keep the chicken from getting a nice char and may make the skewers slippery.
- Soak wooden skewers before grilling. About 20 to 30 minutes in water helps prevent burning on the grill.
