Helpful Tips

  • Use gel food coloring for the deepest black and brightest orange. A little goes a long way, and it won’t thin out your filling or soak into the whites.
  • Soak the peeled egg whites in a bowl of water mixed with black food coloring until they reach your desired level of darkness—30 minutes usually does the trick.
  • Pipe the filling into the eggs for a cleaner, more dramatic look. You can even use a star tip for extra flair.

Ingredients

  • 6 large eggs
  • 10 drops black food coloring gel
  • 3 tablespoons mayonnaise
  • 1 teaspoon pickle juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon Dijon mustard
  • 3 drops orange food coloring or 2 drops red/2 drops yellow
  • Everything But the Bagel seasoning

Instructions

  • Boil the eggs for 12 minutes, then put them in a bowl with ice water to cool for 10 minutes.
  • Lightly crack the eggs by rolling them on the countertop. Put them in a bag with about 10 drops of black food coloring gel. Mix the gel all around so the eggs are coated. Put them in the refrigerator overnight.
  • Carefully peel the eggs (I wear gloves to prevent staining my hands).
  • Cut the eggs in half and remove the yolks.
  • In a bowl, mix the yolks with the mayo, pickle juice, salt, and mustard. Taste and adjust seasoning to your liking.
  • Spoon or pipe the filling back into the egg halves. Garnish with Everything But the Bagel seasoning.
