Ingredients

  • 8 mini flour tortillas (I use street taco size)
  • 4 ounces ground beef
  • 1 tablespoon taco seasoning
  • 2/3 cup shredded cheese
  • 8 round tortilla chips
  • 1/4 cup sour cream
  • 1/2 cup lettuce chopped
  • 1/2 cup diced tomatoes
  • Cooking spray or oil for toasting
  • Salsa and/or guacamole for dipping

Instructions

  • In a skillet over medium heat, cook the ground beef, crumbling as it cooks. Drain any excess grease. Add the taco seasoning and equal amount of water. Stir until combined.
  • Add a scoop of ground beef and a pinch of shredded cheese to the center of the 4 flour tortillas, leaving a generous border for folding. Place a tortilla chip on top. Spread sour cream over the tortilla chip, then top with lettuce and tomato. Tightly fold the edges of the tortilla toward the center, creating pleats.
  • In a flat skillet over medium heat, heat the oil. Add the crunch wraps, seam side down and cook, turning halfway through, until tortilla is golden, about 3 minutes per side. Transfer to a plate or platter. Serve with salsa and guacamole.
