Loaded Tater Tots are crispy, golden-brown bites of potato goodness piled with melty cheese, sour cream, bacon, and chives.

Ingredients
  

  • 20-30 frozen tater tots
  • 1/3 cup cheddar cheese shredded
  • 1/4 cup sour cream
  • 2 slices bacon cooked and crumbled
  • Chives sliced

Instructions
 

  • Preheat the oven to 450ºF (230°C). Grease the cups of a mini muffin pan.
  • Place 2-3 tots in each muffin cup.
  • Bake for 10 minutes. Remove the pan from the oven and let cool slightly.
  • Mold the tots into cups inside the tray. You can do this by pressing a small round object into the tray and twisting to force the tots up the sides. Return to oven; bake for 15 more minutes.
  • Add cheese to each potato cup. Bake for 2-3 minutes, until the cheese has melted. Transfer to a serving platter. Top with sour cream, bacon bits, and chives.

Notes

  • For perfectly crispy tots, start with frozen tater tots. Bake them twice to ensure they hold their shape and get super crispy.
  • You can use a small round object to force the tots up the sides. I found that my cocktail muddler worked well.
  • These little bites are irresistible. For the best texture serve them straight out of the oven.
