In a bowl, soak the chicken pieces in buttermilk for at least 30 minutes to tenderize the meat.
In another bowl, combine the flour, garlic powder, salt, and pepper. Mix well.
Heat oil in a deep skillet or fryer to 350°F (175°C).
Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the seasoned flour mixture.
Fry the chicken in batches until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.
Preheat your waffle iron according to the manufacturer's instructions.
In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In another bowl, combine the buttermilk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined.
Lightly grease the waffle iron and pour the batter according to the manufacturer’s instructions. Cook until golden brown and crispy. Repeat until all the batter is used.
Cut the waffles into 4, or use a cookie cutter to cut circles out.
Place a piece of fried chicken on a piece of waffle. Drizzle with maple syrup. Repeat with the remaining waffles and chicken. Serve with more maple syrup on the side.
