Ingredients
  

For the Bang Bang Chicken

  • 2 cups breaded chicken bites cooked
  • 1/4 cup mayonnaise
  • 3 tablespoons sweet chili sauce
  • 1 tablespoon sriracha adjust to taste
  • Salt and pepper to taste

For the Nachos

  • 2 cups Monterey Jack shredded
  • 2 teaspoons cornstarch mixed with 2 tsp water
  • 5 ounces tortilla chips
  • 1 green onion sliced
  • 1/4 cup cilantro chopped
  • 2 jalapenos sliced (seeds removed, if you want)

Instructions
 

  • In a bowl, mix together the mayonnaise, sweet chili sauce, sriracha, garlic powder, salt, and pepper until well combined. Roughly chop the chicken. Add the cooked chicken to the sauce and stir until fully coated. There will be extra sauce. Leave it in the bowl.
  • In a small saucepan over medium heat, melt the cheese. Once melted, add the cornstarch slurry and stir well. This helps the cheese be pourable.
  • In a serving bowl, spread out a layer of tortilla chips. Drizzle on the melted cheese, then evenly distribute the Bang Bang Chicken over the chips.
  • Sprinkle on the green onions, cilantro, and jalapenos. Drizzle with the extra sauce.

Notes

  • Use whatever type of cheese you like. The Monterey Jack pairs well because it's mild, but you can use cheddar, or nacho cheese, instead.
