Preheat the broiler in your oven. Line a baking sheet with parchment paper or spray it lightly with cooking oil.
Wrap half a slice of bacon around each shrimp and secure it with a toothpick.
In a small bowl, stir together the honey, soy sauce, and garlic salt. Divide the sauce and reserve half for later. Add the shrimp to the bowl with the remaining sauce and toss to coat.
Place the shrimp, spaced apart, on the baking sheet. Broil for 8-10 minutes, until the bacon is crisp and shrimp are cooked through.
Toss the cooked shrimp in the remaining sauce. Sprinkle with fresh parsley and serve.
