1cupapples (Granny Smith or your favorite tart apple)peeled and finely diced

For the glaze
1cuppowdered sugar
2tbspmilk
1/2tspvanilla extract
Instructions
In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
In a separate bowl, whisk milk, egg, and vanilla extract until combined.
Pour the wet ingredients into the dry and stir until just combined. Fold in the diced apples.
Preheat oven to 350°F (175°C). Lightly grease a mini muffin tin with cooking spray.
Spoon batter into the mini muffin cups, filling about 2/3 full. Bake for 12-15 minutes, or until a toothpick inserted comes out clean and the tops are golden.
In a small bowl, whisk powdered sugar, milk, and vanilla until smooth. Adjust consistency with more milk or sugar as needed.
Drizzle the glaze over warm fritter bites or dip each bite before serving.
