1/2 cup Greek yogurt 1/2 cup cucumber peeled and grated 1 clove garlic minced 2 teaspoons fresh dill chopped or 1/2 teaspoon dried 1/2 tablespoon fresh lemon juice 1/2 tablespoon olive oil 2 Roma tomatoes chopped 1/2 English cucumber chopped 1/2 green bell pepper chopped 1/2 small red onion thinly sliced 1/2 cup Kalamata olives pitted and halved 2 ounces feta cheese crumbled or cubed 1 tablespoon olive oil 1/2 tablespoons red wine vinegar 1 teaspoon dried oregano Salt and pepper to taste
Sqeeze excess water out of the cucumber. Mix it in a bowl with the Greek yogurt, garlic, dill, lemon juice, and olive oil. Season to taste. Spread it on a serving platter.
In a large bowl, combine the tomatoes, cucumber, bell pepper, red onion, olives, feta, olive oil, vinegar, and oregano. Season with salt and pepper. Stir to combine.
Pour the salad over the tzatziki.
Serve with toasted pita chips.
