Put 2 tortillas together and cut 5-7 pumpkins out of both layers with a cookie cutter.
Using a small, sharp knife or kitchen scissors, carefully cut simple Jack O’Lantern facial features (triangle eyes, nose, and a smiling or jagged mouth) into half of the pumpkin cutouts.
Heat a large skillet over medium-low heat.
Place the bottoms of the pumpkins (without faces) on the skillet. Sprinkle about 2 tablespoons of shredded cheese evenly over the tortilla. Top each with the face pumpkins.
Cook for 2-3 minutes, until cheese is melted and the tortilla is crispy.
Remove from the pan and let cool slightly before serving to kids.
