Ingredients
  

  • 1/4 cup extra virgin olive oil high-quality
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon lemon zest
  • 1/4 cup fresh cilantro or parsley
  • 2 tablespoons fresh dill
  • 1/4 cup pomegranate seeds
  • 8 ounces fresh goat cheese
  • For serving: Crostini cucumber slices cherry tomatoes

Instructions
 

  • In a food processor or stick blender attachment, pulse together olive oil, lemon juice and zest, cilantro, and dill until just roughly chopped (don’t puree).
  • Form the goat cheese into the shape of a tree on a serving platter.
  • Pour the herb mixture over the top of the tree to coat. Sprinkle on the pomegranate seeds.
  • Serve with crostini and vegetables for dipping.

Notes

  • Freshly chopped herbs like dill, cilantro, and parsley add a burst of flavor and a pop of color that dried herbs just can’t match.
  • Refrigerating the goat cheese before shaping helps it firm up, making it easier to handle and shape into festive designs.
