Ingredients
  

  • 4 spinach tortillas store-bought or homemade
  • 6 ounces cream cheese softened
  • 1/4 cup prepared pesto
  • 1 green onion chopped
  • Salt and pepper to taste
  • Shamrock-shaped cookie cutter

Instructions
 

  • In a mixing bowl, combine the softened cream cheese, pesto, green onions, salt, and pepper. Mix until smooth and well combined. Adjust the seasoning to taste.
  • Lay one spinach tortilla flat on a clean surface. Spread a generous layer of the cream cheese mixture evenly over the entire tortilla.
  • Place another spinach tortilla on top of the first one, pressing down gently to adhere. Using a shamrock-shaped cookie cutter, cut out shamrock shapes from the layered tortillas. Repeat this process with the remaining tortillas and cream cheese mixture.
  • Arrange the shamrock tortilla bites on a serving platter to serve.

Notes

  • You can mix any spices or herbs with the cream cheese. We like pesto, but there are many other great combinations to try.
  • Get whipped cream cheese if you want to spread it easier without having to soften it first.
