In a mixing bowl, combine the softened cream cheese, pesto, green onions, salt, and pepper. Mix until smooth and well combined. Adjust the seasoning to taste.
Lay one spinach tortilla flat on a clean surface. Spread a generous layer of the cream cheese mixture evenly over the entire tortilla.
Place another spinach tortilla on top of the first one, pressing down gently to adhere. Using a shamrock-shaped cookie cutter, cut out shamrock shapes from the layered tortillas. Repeat this process with the remaining tortillas and cream cheese mixture.
Arrange the shamrock tortilla bites on a serving platter to serve.
Notes
You can mix any spices or herbs with the cream cheese. We like pesto, but there are many other great combinations to try.
Get whipped cream cheese if you want to spread it easier without having to soften it first.
