Festive Pot of Gold Mimosa

This Pot of Gold Mimosa is made with pineapple juice and vodka, and a splash of blue curacao for a color-changing twist. Top it off with bubbly for the perfect St. Patrick's Day cocktail.

2 ounces pineapple juice 0.5 ounce vodka 2 ounces Champagne 0.5 ounce Blue Curacao
Pour the pineapple juice into a Champagne flute. Add the vodka and stir.
Pour the Champagne over the top, leaving room for the Blue Curacao.
Quickly pour in the Blue Curacao so it settles at the bottom.
Don't stir the blue curacao when you add it to the drink so that you keep the gradient color change of yellow to green.
You can use prosecco, cava, or sparkling wine in place of the Champagne if you like.
This is a sweet cocktail already so a drier champagne or sparkling wine is preferable.
