Start by boiling the gnocchi according to the package instructions. Once they float to the surface (usually after 2-3 minutes), they are done. Drain them and let them cool for a few minutes.
In a large bowl, toss the cooked gnocchi with olive oil, garlic powder, Italian seasoning, salt, and pepper until they are evenly coated. The olive oil will help achieve that crispy texture in the air fryer.
Preheat your air fryer to 400°F (200°C). Place the seasoned gnocchi in a single layer in the air fryer basket, making sure not to overcrowd them. You may need to cook in batches depending on the size of your air fryer. Air fry for about 10-12 minutes, shaking the basket halfway through, until the gnocchi are golden brown and crispy.
Once cooked, remove the gnocchi from the air fryer and transfer them to a serving bowl. If desired, sprinkle with grated Parmesan cheese and fresh herbs for an extra touch of flavor. Serve immediately and enjoy the delightful crunch!
