- 1 prepared pie crust
- 1 egg
- 1/2 cup heavy whipping cream
- 2 ounces Gruyère cheese finely grated
- 10 asparagus spears woody ends removed
- 1/4 teaspoon Salt and ground black pepper
Preheat the oven to 350°F (180°C). Lightly grease the wells of a mini muffin pan.
Roll out the pie dough. Shape it into a rectangle with a slightly raised edge around the outside.
Bake for 10 minutes, then remove from the oven and let cool.
In a bowl, whisk together the eggs, cream, and Gruyère cheese with salt and pepper.
Pour the mixture into the crusts and lay the asparagus spears right next to each other.
Bake for 14 minutes or until just set. Let cool for a few minutes before slicing.
While the tarts bake, whisk together the olive oil, vinegar, mustard, and a pinch of salt.
Top the tart with more finely shredded Gruyere cheese. These can be served hot or cold.
