Ingredients
  

  • 1 prepared pie crust
  • 1 egg
  • 1/2 cup heavy whipping cream
  • 2 ounces Gruyère cheese finely grated
  • 10 asparagus spears woody ends removed
  • 1/4 teaspoon Salt and ground black pepper

Instructions
 

  • Preheat the oven to 350°F (180°C). Lightly grease the wells of a mini muffin pan.
  • Roll out the pie dough. Shape it into a rectangle with a slightly raised edge around the outside.
  • Bake for 10 minutes, then remove from the oven and let cool.
  • In a bowl, whisk together the eggs, cream, and Gruyère cheese with salt and pepper.
  • Pour the mixture into the crusts and lay the asparagus spears right next to each other.
  • Bake for 14 minutes or until just set. Let cool for a few minutes before slicing.
  • While the tarts bake, whisk together the olive oil, vinegar, mustard, and a pinch of salt.
  • Top the tart with more finely shredded Gruyere cheese. These can be served hot or cold.
