The Clover Club Cocktail is a cocktail consisting of gin, lemon juice, raspberry syrup, and an egg white.

The Clover Club Cocktail pre-dates prohibition era cocktails and was first served in a Philadelphia men’s clubs of the same name in the early 1900’s.
The egg white is the secret ingredient of this drink. It adds a unique body and silky finish that you’ll love. I tried this recipe with and without the egg white and much preferred it with.
Don’t worry, raw egg whites are a safe ingredient when stored properly and handled with care.

Wash your hands well before separating the yolk from the white. The less the egg white comes into contact with the shell, the less chance there is to pick up any bacteria that may be lurking there.

Clover Club Cocktail
The Clover Club Cocktail is a cocktail consisting of gin, lemon juice, raspberry syrup, and an egg white.
Ingredients
- 4 fresh raspberries
- 1/2 oz simple syrup (1 part sugar, 1 part water)
- 2 oz gin
- 1 egg white
- 1/2 oz fresh lemon juice
- Raspberries, for garnish
Instructions
- Muddle the raspberries with the simple syrup in a cocktail shaker. Add the gin, egg white, and lemon juice to the shaker with ice and shake well.
- Strain into a coupe glass.
- Garnish with 2 speared raspberries
